Steps

  1. Heat the oven to 175 °C / 350 °F. Line the baking dish with baking paper.

  2. Melt the butter and chopped chocolate in the pot on low heat, stirring all the time. Take it off the heat as soon as it is smooth.

    Done looks like: Smooth and glossy, with no lumps. Warm, not hot to the touch.
  3. Stir in the erythritol and cocoa. Let it cool 3 minutes.

  4. Beat in the eggs one at a time with the spatula, then the vanilla.

    Done looks like: Thick and shiny, pulling away from the sides of the pot.
  5. Stir in the almond flour, baking powder and salt until no dry flour shows.

  6. Spread in the dish. Bake 20–25 minutes.

    Done looks like: Top set and cracked at the edges. A toothpick in the middle comes out with moist crumbs, not wet batter.
  7. Cool in the dish at least 30 minutes, then chill 30 minutes before cutting into 8 squares. They firm up and get fudgy as they cool.
