Steps

  1. Heat the oven to 200 °C / 400 °F.

  2. Cut the avocado in half around the pit. Twist apart and remove the pit.

  3. Scoop out 1 tablespoon of flesh from each half to make the hole bigger. Eat it or save it.

  4. Set the halves in the baking dish, cut side up. Crack one egg into each hole.

    Done looks like: Egg fills the hole. A little white spilling over is fine.
  5. Sprinkle with salt, pepper and paprika. Bake 15–20 minutes.

    Done looks like: Whites are white and firm, with no clear jelly left. Yolk is firm when pressed.
  6. Top with the cilantro.
