Steps

  1. Put the edamame in a sieve and run warm tap water over them for 2 minutes. Shake dry.

    Done looks like: No ice left. Beans soft enough to bite through.
  2. Slice the cabbage as thin as you can. Grate the carrot. Slice the green onions. Chop the cilantro and peanuts.

  3. In a large bowl, whisk the rice vinegar, sesame oil, tamari, lime juice and ginger.

  4. Add the cabbage, carrot, edamame, green onion and cilantro. Toss well and leave 10 minutes.

    Done looks like: Cabbage slightly glossy and a little softer.
  5. Toss again and top with the sesame seeds and peanuts.
