Steps

  1. Dice the onion and bell pepper. Mince the garlic.

  2. Heat the oil in the pot on medium. Cook the onion and pepper 6 minutes, stirring now and then.

  3. Add the garlic, chili powder and cumin. Stir for 30 seconds.

    Done looks like: Spices smell toasted. Nothing is burning on the bottom.
  4. Add the tomatoes, broth, water and the whole chicken breasts. Bring to a boil, then turn down to a gentle simmer. Cover and simmer 15–18 minutes.

    Done looks like: Chicken reads 74 °C / 165 °F in the thickest part.
  5. Lift out the chicken and shred it with two forks. Put it back in the pot.

  6. Stir in the lime juice. Taste, then add salt and pepper. Serve topped with avocado and cilantro.
