Steps

  1. Put the chicken in the pot and cover with cold water by 3 cm (1 in). Add a pinch of salt.

  2. Bring it up on medium heat until the water starts to tremble, with a few small bubbles. Turn the heat to low.

  3. Poach 12–15 minutes. Check the thickest part with a thermometer.

    Done looks like: Thermometer reads 74 °C / 165 °F or higher. Meat white all through.
  4. Lift the chicken onto the board and let it cool 10 minutes. Meanwhile, dice the celery, slice the green onions and chop the parsley and walnuts.

  5. In a bowl, stir the yogurt, mustard, lemon juice, salt and pepper.

  6. Shred or dice the chicken. Fold it into the yogurt with the celery, green onion, parsley and walnuts. Taste and add salt or lemon.

    Done looks like: Every piece of chicken coated, no dry patches.
  7. Spoon into the lettuce leaves to eat.
