Steps

  1. Cut the cucumber into rounds 1.5 cm (½ in) thick. Pat them dry.

  2. Chop the olives and parsley finely.

  3. In a small bowl, stir the cottage cheese with the parsley, lemon juice and pepper.

    Done looks like: Green flecks all through the cheese.
  4. Spoon the cheese onto the rounds. Top with the olives and a few drops of olive oil.
