Steps

  1. Shred the cabbage thinly. Grate the carrot. Mince the garlic and grate the ginger. Slice the green onions, keeping the white and green parts apart.

  2. Mix the soy sauce, vinegar and sesame oil in a cup.

  3. Heat the oil in the pan on medium-high. Add the turkey and break it up. Cook 6–7 minutes.

    Done looks like: No pink left, with some browned bits. 74 °C / 165 °F.
  4. Add the garlic, ginger, white parts of the green onions and the pepper flakes. Stir 1 minute.

  5. Add the cabbage and carrot. Cook 4–5 minutes, stirring often.

    Done looks like: Cabbage wilted and glossy but still with some bite.
  6. Pour in the sauce and toss 1 minute. Top with the green onion tops and sesame seeds.
