Steps

  1. Drain and rinse the beans. Slice the avocado. Squeeze the lime juice over the avocado.

  2. Heat half the oil in the pan on medium. Add the beans, cumin and 2 tablespoons of water. Cook 3 minutes, mashing a few beans with the spatula.

    Done looks like: Beans hot and saucy, with some broken up.
  3. Spoon the beans into a bowl. Wipe the pan.

  4. Heat the rest of the oil on medium. Crack in the eggs. Sprinkle with salt. Cook 2–3 minutes.

    Done looks like: Whites set and white around the edges, lifting from the pan.
  5. Flip each egg. Cook 1–2 minutes more.

    Done looks like: Yolk firm when pressed with the spatula.
  6. Lay the eggs on the beans. Top with salsa, avocado and cilantro.
