Steps

  1. Soak the noodles in hot tap water for 20 minutes, then drain.

    Done looks like: Bendy enough to wrap round a finger, with a firm white core.
  2. While they soak, press the tofu and cut it into small cubes. Mince the garlic. Cut the green onions into 3 cm (1 in) lengths. Chop the peanuts.

  3. Stir together the tamarind, tamari and sugar until the sugar dissolves.

  4. Heat 1 tbsp oil in the pan on high. Fry the tofu 5 minutes until golden, then push it to the side. Crack in the eggs and scramble until just set.

  5. Add the rest of the oil, the garlic, noodles and sauce. Toss with tongs or two spatulas for 2–3 minutes.

    Done looks like: Noodles soft and chewy. Sauce absorbed, nothing pooling.
  6. Add the sprouts and green onion and toss 30 seconds. Serve with the peanuts and lime juice.
