Steps

  1. Heat the oven to 200 °C / 400 °F. Line the sheet pan with parchment.

  2. Mix the parmesan, oregano and pepper.

  3. Drop level tablespoons onto the pan, 5 cm (2 in) apart. Pat each into a thin round.

  4. Bake 5–7 minutes.

    Done looks like: Bubbling stops and the crisps are light golden at the edges.
  5. Cool on the pan 5 minutes, then lift off with the spatula.

    Done looks like: Snaps cleanly when bent.
