Steps

  1. Blend the cottage cheese, eggs, oats, baking powder, vanilla, cinnamon and salt until smooth, about 1 minute. Let it stand 5 minutes to thicken.

    Done looks like: Smooth, thick batter that falls slowly from a spoon.
  2. Heat the pan on medium-low for 2 minutes. Add ½ tsp oil and spread it around.

  3. Pour in 3 tbsp batter per pancake, 2 or 3 at a time. Cook 2–3 minutes.

    Done looks like: Bubbles on top, edges look dry and set, underside golden.
  4. Flip and cook 1–2 minutes more. Move to a plate. Add a little oil before each batch.

    Done looks like: Both sides golden and the middle springs back when pressed.
  5. Serve with the strawberries and a drizzle of maple syrup.
