Steps

  1. Heat the oven to 220 °C / 425 °F.

  2. Cut the zucchini, pepper and onion into bite-size chunks. Drain and rinse the chickpeas, then pat them dry.

  3. On the sheet pan, toss the vegetables and chickpeas with the oil, salt and pepper. Roast 20–25 minutes, stirring once.

    Done looks like: Vegetables browned at the edges. Chickpeas slightly crisp.
  4. Meanwhile, rinse the quinoa in a sieve. Put it in the pot with 1 cup (240 mL) water and a pinch of salt. Bring to a boil, cover and simmer on low 15 minutes. Leave the lid on for 5 minutes more.

    Done looks like: Water gone. Tiny white spiral tails showing on the grains.
  5. Mince the garlic. Stir it into the tahini and lemon juice, then add water 1 tbsp at a time until it pours.

  6. Split the spinach between two bowls. Top with the quinoa, roasted vegetables and chickpeas, and drizzle with the dressing.
