Steps

  1. Slice the seitan, pepper and onion into thin strips.

  2. Heat the oil in the pan on medium-high. Add the pepper and onion. Cook 5 minutes, stirring now and then.

    Done looks like: Soft, with charred edges.
  3. Add the seitan, chili powder and cumin. Cook 3–4 minutes until the seitan browns. Squeeze over the lime juice.

  4. Warm the tortillas in the dry pan or the microwave. Fill with the seitan, vegetables and sliced avocado.

  • Wide flat base so food cooks in one layer
  • Stainless steel or cast iron for high heat

Skip: Woks on flat electric stoves; they do not heat evenly there.
