Steps

  1. Slice the cucumber into thin rounds, about 3 mm (⅛ in). Slice the green onion.

  2. Put the cucumber in a bowl, sprinkle with the salt and toss. Leave 5 minutes, then pour off the water in the bottom.

    Done looks like: A spoonful or two of water in the bowl. Slices a little bendy.
  3. In a small bowl, stir the vinegar, sesame oil and soy sauce together.

  4. Pour the dressing over the cucumber and toss. Top with the green onion, sesame seeds and pepper flakes.
