Steps

  1. Dice the onion and pepper. Mince the garlic.

  2. Heat the oil in a pan that has a lid, on medium. Cook the onion and pepper 8 minutes.

    Done looks like: Soft and sweet-smelling, starting to brown.
  3. Add the garlic, cumin and paprika and stir for 30 seconds. Add the tomatoes, salt and pepper. Simmer 8 minutes until slightly thick.

  4. Make 4 hollows with a spoon and crack an egg into each. Cover and cook on low 5–8 minutes.

    Done looks like: Whites set and opaque. Yolks still jiggle.
  5. Scatter the feta over and serve from the pan.
