Steps

  1. Heat the oven to 220 °C / 425 °F.

  2. Cut the sweet potato into 2 cm (¾ in) cubes. Cut the pepper and onion into chunks about the same size.

  3. On the sheet pan, toss the vegetables with half the oil and some salt and pepper. Spread out. Roast 10 minutes.

  4. Meanwhile, rub the chicken with the rest of the oil, the paprika, garlic powder, salt and pepper.

  5. Push the vegetables to the sides, lay the chicken in the middle and roast 20 minutes more.

    Done looks like: Chicken reads 74 °C / 165 °F. Sweet potato soft and browned at the edges.
