Steps

  1. Thaw the shrimp if frozen and pat them dry. Trim the green beans and cut them into 5 cm (2 in) pieces. Mince the garlic and grate the ginger.

  2. Mix the soy sauce, rice vinegar and sesame oil in a cup.

  3. Heat 1 tbsp oil in the pan on high until it shimmers. Add the green beans. Stir-fry 4–5 minutes.

    Done looks like: Bright green with blistered brown spots, still crisp.
  4. Push the beans to the side. Add the rest of the oil and the shrimp in one layer. Cook 1 minute, flip, then toss with the beans 1 minute.

  5. Add the garlic, ginger and pepper flakes. Toss 30 seconds. Pour in the sauce and toss 30 seconds more.

    Done looks like: Shrimp pink and opaque, curled into a loose C, 63 °C / 145 °F. Sauce glazes everything.
  6. Sprinkle with the sesame seeds.
