Steps

  1. Put a pot of salted water on to boil. Blend the basil, parmesan, walnuts, garlic, lemon juice, 2 tbsp of the oil and 2 tbsp of water until smooth.

    Done looks like: Bright green, thick paste with no whole leaves left.
  2. Halve the tomatoes. Pat the shrimp dry and season with salt and pepper.

  3. Cook the pasta 1 minute less than the packet says. Scoop out ½ cup of the water, then drain.

    Done looks like: Tender with a slight bite in the middle.
  4. While the pasta cooks, heat the rest of the oil in the pan on medium-high. Add the shrimp in one layer. Cook 2 minutes, flip, and cook 1–2 minutes more.

    Done looks like: Pink and opaque all the way through, curled into a loose C. 63 °C / 145 °F.
  5. Turn the heat off. Add the pasta, tomatoes, pesto and 3 tbsp of pasta water to the pan. Toss until glossy.

    Done looks like: Pesto coats every piece and pools a little, not dry or oily.
