Steps
Grate the cauliflower on the large holes of the box grater. Thaw the shrimp if frozen and pat them very dry.
Done looks like: Cauliflower in rice-sized crumbs. In a bowl, stir the tamari, sesame oil, rice vinegar, lime juice and ginger. Dice the cucumber and avocado. Slice the green onion.
Heat 1 tsp vegetable oil in the pan on medium-high. Add the cauliflower and stir often for 4–5 minutes. Tip it into your serving bowl.
Done looks like: Tender with a little bite. A few golden spots, not mushy. Add the rest of the oil to the pan. Lay the shrimp in one layer and cook 1–2 minutes, then turn each one and cook 1 minute more.
Done looks like: Pink and opaque all through, curled into a loose C (63 °C / 145 °F). Tip the shrimp into the sauce bowl and toss.
Top the cauliflower rice with the shrimp and any sauce, the cucumber and avocado. Scatter the green onion, sesame seeds and pepper flakes.
