Steps

  1. Peel the sweet potato. Cut into 1.5 cm (½ in) cubes. Dice the pepper and onion. Slice the garlic.

  2. Heat the oil in the skillet on medium. Add the sweet potato, onion and 1 pinch of salt. Stir to coat.

  3. Add the water. Cover and cook 8 minutes, stirring once.

    Done looks like: A knife slides into a sweet potato cube with little push.
  4. Uncover. Push everything to the sides. Add the turkey in the middle and break it up with the spatula.

  5. Add the pepper, garlic, paprika, cumin and the rest of the salt. Cook 7–8 minutes, stirring now and then.

    Done looks like: Turkey browned with no pink left. Thermometer reads 74 °C / 165 °F. Sweet potato golden in spots.
  6. Add the spinach. Stir until it wilts, about 1 minute. Add pepper.
