Steps

  1. In a bowl, mix the thyme, garlic powder, onion powder, paprika, salt and pepper.

  2. Add the turkey. Mix gently with your hands until the spices are spread through.

  3. Wet your hands. Shape 8 flat patties, about 1 cm (⅜ in) thick. Wash your hands.

    Done looks like: Even patties, the same thickness from edge to middle.
  4. Heat half the oil in the pan on medium-high for 2 minutes. Add 4 patties. Do not move them for 3–4 minutes.

    Done looks like: Browned underneath. They lift from the pan easily.
  5. Flip. Cook 3 minutes more. Check the thickest patty with a thermometer.

    Done looks like: Thermometer reads 74 °C / 165 °F in the middle. No pink inside.
  6. Move to a plate. Repeat with the rest of the oil and patties.
