Steps

  1. Put the watermelon, lime juice, mint and salt in the blender.

  2. Blend on high for 20–30 seconds.

    Done looks like: Thin, bright pink juice with a pale foam on top and green flecks.
  3. Pour through a sieve into a jug. Stir the pulp to push the juice through.

  4. Fill two glasses with ice. Pour in the juice and top each with sparkling water. Add a mint sprig.
