Out of something, or need to avoid gluten, dairy, eggs, nuts or sugar? Pick the ingredient to see what you can use instead, how much of it, and how the nutrition changes.

A substitute rarely works everywhere. Coconut oil replaces butter in baking but not in a pan sauce; zucchini noodles suit pesto but turn a baked pasta watery. Each one says which dishes it suits and where it doesn’t.

Recipes here are tested with the ingredients they list, so treat a substitute as an experiment. When a swap changes the texture a lot, try it on a small batch first.
